Matt Mathews has developed a personal style of health-conscious, plant-based comfort food that feels as good as it tastes. This luscious vegan & gluten-free winter dinner explores Asian-inspired flavours for a colourful banquet of dishes from savoury & spicy to crisp & refreshing to sweet & indulgent.
Maple-glazed yam & carrots
with toasted hazelnuts over tender greens with a herbed apple cider vinaigrette
Buckwheat soba noodles
with miso, sesame seeds & scallions
Spicy baked tofu
in a tamari-sriracha sauce with cilantro and fresh chilis
Asian vegetable medley
stir-fried snow peas, water chestnuts, bamboo shoots, baby bok choy, baby corn, mushrooms & Vidalia onions in a homemade black bean sauce
tossed in a garlic-ginger sauce

Matt first learned cooking from his grandmother at a young age, but it wasn’t until he started working in the restaurant/catering industry that his ideas of what food could and should be really expanded. The last 8 or so years working as a bartender and in catering have broadened his culinary horizons, revealing the diversity, quality and originality alive in the world of food. A shift towards vegetarianism over the last 3+ years has ignited a passion for new ingredients, flavours and techniques in Matt’s kitchen.
