Join us for a truly decadent evening featuring ‘The Truffle Lady”, Wanda Srdoc of White Truffles, in downtown Toronto!

Truffles are, for many, a culinary delight that is unattainable. Not so anymore! In this intimate event, Wanda (www.whitetruffles.ca) will provide a history of the white & black truffles, while integrating her exclusive products into a 3 course dinner for you to experience the divine taste of authentic truffles prepared by Chef Petar Budisa.

Paired with these courses will be wines handpicked by Alex Powell, Sommelier at Susur Lee’s flagship restaurant. As always, A Vine Romance searches far and wide to select the very best wine to complement each dish.

Enjoy a welcome wine with truffled popcorn as you mingle and awaken your taste buds. Then a cooking demonstration will show you how to incorporate the delicate flavor of truffles into 3 dishes:

Watercress salad with shaved fennel, seasonal heirloom tomatoes lightly drizzled with a Truffle dressing; truffle risotto and an almond truffle bundt cake with dark chocolate swirl and (vegan option) dark chocolate avocado mousse with truffled salt

As the foods are prepared, we’ll discuss the wine pairing and how it’s flavor profile matches with the dish. Wanda will have a few of her truffle products on hand if you’d like to take something home and try your hand at recreating one of the dishes presented!

Petar Budisa, Executive Chef and Owner of Dalma Catering has an impeccable skill for creating the proper truffle balance in any dish. His easy creations are designed for the home chef who will appreciate an approachable technique to cooking with fine foods.

This series runs for 4 weeks, each Wednesday evening from May 27th – June 17th 2015.

In this four-week hands-on cooking class series, you will be immersed in the kitchen with Marni and learn how to make signature Fresh Restaurant recipes at home. Selecting favourites from the national bestselling Fresh cookbook, each week will delve into a theme giving you the confidence to make plant-based eating, as easy, fun and fresh as ever!
Week 1 – Satisfying Soups
Make hearty, warming soups that will nourish you from the inside out. Using ingredients like beans, root veggies and greens, you will learn to chop, puree and warm up with these delicious recipes.

Recipes: Creamy Celery & Cashew Puree, Butternut Squash with Sage and Roasted Garlic, Broccoli and Cauliflower Puree, Winter Vegetable Chowder.
Week 2 – Vibrant Salads
Take your salads to the next level at home! These are quick and easy salads that can be eaten for lunch or dinner. Loaded with colourful veggies and topped with amazing dressings, you will be pleasantly satisfied.

Recipes: Antioxidant salad, Go Green, Kale & Oyster Mushroom Salad, Asian Salad.

Week 3 – Nourishing Entrees
It’s all about balance when it comes to vegetarian entrees! Experience this wholesome menu with both cooked and raw options. You are sure to get the protein, healthy carbohydrates and healthy fats you need to feel fresher and fuller on these plant-based meals!

Recipes: Grounding Greens with BBQ Tempeh, Quinoa Mushroom & Asparagus Bowl, Lemon Kamut Udon with Greens & Grilled Tofu, Italian Raw Bowl

Week 4 – Sweet & Savoury Brunches
Some say brunch is the best meal of the day. It absolutely can be with some savoury or sweet choices. Which one are you? Maybe you are both?! Either way, get the confidence you need to make your first meal of the day the best meal of the day.

Recipes: Granola Parfaits with Raspberry, Apple, Goji Berry Compote, Tex Mex Tortilla Scramble, Lemon Blueberry Pancakes, Decadent Granola, Fruity Power Shake.
