Join Executive Vegan Chef and cookbook Author Doug McNish and learn everything there is to know about knife skills including what to look for when purchasing knives, proper sharpening and storing.

In this class you will learn the following basic and advanced cuts: Dice – Large, Medium, Small, Brunoise , Mince, Julienne – Large, Medium, Small, Allumette, Paysanne, Batonette , Chop – Rough, Medium, Fine, Paysenne, Oblong, Tournee , Shaved, Bias.

You will also learn the following knife skills: Types of Knives, What to Look for in Purchasing a Knife, How to Properly Hold a Knife, Peeling Citrus Fruit/Melons, Proper Sharpening. At the very end, Doug will put together all of your prepped ingredients to make some delicious dishes that you will get to taste and enjoy!

With the Hallowe’en season fast approaching (and let’s be honest, there’s ALREADY candy in the stores), it’s time to have a fall cookout with your friends in VITT. Let’s gather at the cob fire pit in Dufferin Grove Park and tell ghost stories! :D

The park staff request no drums or amplified music, but welcome acoustic instruments if anyone is so inclined.

Attendees are asked for a pay-what-you-can donation to help cover the cost of firewood, s’more ingredients, and the site permit.

Pack a thermos of something hot and yummy to share. Bring your travel mug, fire blanket & cuddle buddy, roasting stick & tofu dogs, and vegan marshmallows & chocolate chips for s’mores. The park will provide skewers and a trivet for cooking. It’s gon’ be fuuuuun! :D

There are three fire pits in Dufferin Grove: main, cob, and rink. We are booked at cob, the small, southern pit.

An event called Night of Dread will be happening at the main fire pit in parallel with our event. Attendees are welcome to attend both. The parade leaves the park at about 5 or 6pm and returns about 7:30 or 8pm. Details here: http://clayandpapertheatre.org/2014/07/22/night-of-dread-2014/

There’s a rink house, skateboard park, and ice rink on the northwest corner of the park (at Dufferin St & Dufferin Park Ave). There’s a central walking path that extends south (from the corner of Gladstone Ave and Dufferin Park Ave) and north (from a small section of Gladstone Ave that extends north from Sylvan Ave). Just enter the park from any of these points and walk down the central path to the south end; the fire pit is just east of the path by the playground and pretty impossible to miss.

Hoping for a nice evening, but unless there is a torrential downpour such that the park cancels our reservation, this event WILL take place, regardless of how cold, wet, or nasty it is out. Fingers crossed! :)

This class is hosted by Liz Murray, a natural foods chef and cooking class instructor. She is a graduate of The Natural Gourmet Institute for Health and Culinary Arts in NYC, a unique culinary school that focuses on whole foods nutrition. Liz has had an extensive culinary career as a restauranteur, caterer and consultant. She has also worked in various health supportive restaurants in Canada. Liz’s goal is to bring awareness of the healing power of food and joyfully share her culinary knowledge. Liz believes that the anti-inflammatory powers of herbs, spices, nuts and seeds and the immune boosting nutrients of fruits and vegetables are key steps toward preventing diseases and achieving optimum health.
Packed full of nutrients and vitamin D, students will learn that Fungi are a versatile and delicious food group that can be prepared in numerous ways.

Mushroom pate with walnuts and sage
Dashi Broth with shitaki and komu, and finished with enoki mushroom and veggies.

This month’s supper club is all about celebrating the harvest and honouring those who help put amazing local food on our table. So grab your cardigan, put on a little Neil Young and join us for our Harvest Moon dinner.

***Introduction Course: Warm “Samhain” Harvest Salad with Maple Baked Empire Apples, Charred Ontario Corn and Roasted Sweet Potato tossed with Baby Kale

***Second Course: Seared Rutabaga Risotto Gateau served with Roasted Acorn Squash Wedges and Cumin Toasted Macadamia Nuts
