These light, yet protein packed recipes include:
Massaged kale and avocado with marinated chickpeas, fennel, red onion, broccoli sprouts and toasted pumpkin seeds in a light vinaigrette.
Baby greens with quinoa, cherry tomatoes, cucumbers, radishes, shredded carrots, mint, parsley, in a garlic lemon dressing.
Black bean, organic corn, micro cilantro, jalapeno, chopped tomatoes, celery, green onions, cumin, smoked paprika.
Arugula and toasted walnuts with pear, cashew ricotta and fresh basil and sunflower sprouts.
