Many vegan dishes are prepared in Ethiopian Cuisine as an observance of fasting. For those who follow the Ethiopian Orthodox Church, they fast for over 210 days of the year. This results in the usage of a variety of lentils and veggies and lots of garlic, ginger and a spice blend called berbere. This makes Ethiopian Food a very special and unique cuisine that you have to experience for yourself. What better way than to make it yourself!
In this hands on class, students will learn how to make berbere spice blend, Injera bread, green collards, red lentil and yellow lentil stews, Green bean and carrot saute and a refreshing green salad.
