Before a day of fun in the sun, you need to stop by Tori’s Bakeshop on Queen St. East between Woodbine and Victoria Park. Tori’s has been open since 2012 and has grown quite the following, bringing in plenty of curious community members as well as vegetarians and vegans from around the city. It is one of Toronto’s most decadent destinations with plenty of gluten-free options for those in need, as well as a breadth of espresso, tea, and baked goods.

This is not just any vegan bakery, it’s a really beautiful one too. Tori’s Bakeshop is a welcoming, meticulously designed space that’s bright white and grey with plenty of emerald green, wood, and glass accents throughout. Think vintage-style Edison lightbulbs fixed in hand-made whisk enclosures alongside mason jars that hold everything from tea to… more lightbulbs. Even if it weren’t for the delicious treats, I’d still visit Tori’s for how stunning it looks.

For drinks, the Muskoka (whirled organic watermelon, mint, and lime over ice with soda water finish) will keep you pleasantly hydrated while also bringing back cottage childhood memories without even leaving the city. Their coffee is also awesome – it’s their own custom blend, so try it out! Tea drinkers will not be disappointed either – there’s a great collection (in mason jars, of course).

For treats, you really need to try the smoked coconut bacon BLT sandwich, the baked potato scone (or any of the scones, really), and a croissant – flaky and decadent, this is the croissant you’ve been waiting for. If you’re lucky, there may even be a pizza pocket to treat yourself with. For dessert, Tori’s offers a wide selection of treats such as cupcakes (recently voted “Best Cupcake” by NOW Magazine), butter tarts, cinnamon buns, donuts, and much more.

My recommendation: Grab as many icy drinks and sweet treats you can hold and head to the beach with a blanket, some sunscreen, and few best friends.
