Colleen’s favourite easy meal from the book is Quick Noodles with Miso Lemon Tahini Sauce. Cook a half pound of pasta and add two tablespoons each of light miso, tahini, tamari, nutritional yeast, lemon juice, and olive oil. Add two cloves of garlic and some optional spinach or nori. Other delicious recipes include: Tofu Baked in Almond Mint Cilantro Sauce, Sweetpepper Coconut Corn Chowder, and Chocolate Chunk Lavender Cookies. – Colleen volunteers in the Resource Centre.

Sometimes Jaffrey adopts vegetarian ingredients to make nonmeat versions of familiar dishes, such as a Mock Lamb Curry with seitan (wheat gluten), but more often she simply delves into the meatless tradition of a specific country and pulls up a signature dish (Savory Greek Pumpkin Pie).“
